Description

Fluffy cottage cheese egg bites with eggs, cottage cheese, vegetables, and optional turkey bacon or cheese.


Ingredients

8 to 10 eggs

1 cup cottage cheese

Salt and black pepper, to taste

Chopped spinach, optional

Diced bell pepper, optional

Cooked turkey bacon, optional

Shredded cheese, optional

Oil spray or muffin liners


Instructions

  1. Preheat oven to 350 degrees F.
  2. Grease a muffin tin or line it with muffin liners.
  3. Blend eggs and cottage cheese until smooth.
  4. Stir in salt, pepper, and desired mix-ins.
  5. Pour mixture into the muffin tin.
  6. Bake 18 to 22 minutes until set.
  7. Cool before storing or serving.
