Description

These pancakes are incredibly soft, packed with fresh apples, and enriched with yogurt for a delicious and nutritious breakfast.


Ingredients

  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1 tablespoon sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 cup plain yogurt
  • 1 large egg
  • 1 tablespoon melted butter
  • 1 cup diced apples
  • Maple syrup (for serving)
  • Powdered sugar (for serving)

Instructions

  1. In a large bowl, mix together the flour, baking powder, sugar, cinnamon, and salt.
  2. In another bowl, whisk together the yogurt, egg, and melted butter until smooth.
  3. Combine the wet and dry ingredients, stirring until just mixed. Fold in the diced apples.
  4. Heat a non-stick skillet over medium heat and lightly grease it.
  5. Pour 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface, then flip and cook until golden brown.
  6. Serve warm with maple syrup or powdered sugar sprinkled on top.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to a month. Reheat in the microwave or a skillet.
