Ingredients

- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1 tablespoon sugar
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 cup plain yogurt
- 1 large egg
- 1 tablespoon melted butter
- 1 cup diced apples
- Maple syrup (for serving)
- Powdered sugar (for serving)
Instructions
- In a large bowl, mix together the flour, baking powder, sugar, cinnamon, and salt.
- In another bowl, whisk together the yogurt, egg, and melted butter until smooth.
- Combine the wet and dry ingredients, stirring until just mixed. Fold in the diced apples.
- Heat a non-stick skillet over medium heat and lightly grease it.
- Pour 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface, then flip and cook until golden brown.
- Serve warm with maple syrup or powdered sugar sprinkled on top.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to a month. Reheat in the microwave or a skillet.
