Ingredients

- 500 g (about 4 cups) fresh strawberries
- 240 ml (1 cup) heavy cream
- 100 g (1/2 cup) powdered sugar
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- Prepare the strawberries: Wash the strawberries, remove the stems, slice into quarters, and mix with 1 tablespoon of powdered sugar. Let sit for 10 minutes.
- Whip the cream: In a separate bowl, combine heavy cream, remaining powdered sugar, and vanilla extract. Beat until soft peaks form (3–5 minutes).
- Blend the strawberries into a smooth puree using a blender or food processor.
- Combine the strawberry puree with the whipped cream, gently folding to maintain the airy texture.
- Chill the mousse in serving glasses for at least 2 hours before serving.
Notes
For a more intense strawberry flavor, reduce the strawberry puree over low heat before folding into whipped cream. Store leftovers in an airtight container for up to 3 days.
