Optional: 1 teaspoon Dijon mustard
Instructions
- Peel and chop the hard-boiled eggs.
- Add eggs, mayonnaise, celery, herbs, lemon juice, salt, and pepper to a bowl.
- Stir gently until creamy but still textured.
- Taste and adjust with mustard, lemon, salt, or pepper.
- Serve on bread, crackers, lettuce leaves, or toast.
