Description

Creamy easy egg salad with hard-boiled eggs, mayonnaise, celery, lemon, herbs, salt, and pepper.


Ingredients

4 hard-boiled eggs

2 tablespoons mayonnaise

1 celery stalk, finely chopped

1 tablespoon chopped dill or parsley

1 teaspoon lemon juice

Salt and black pepper, to taste

Optional: 1 teaspoon Dijon mustard


Instructions

  1. Peel and chop the hard-boiled eggs.
  2. Add eggs, mayonnaise, celery, herbs, lemon juice, salt, and pepper to a bowl.
  3. Stir gently until creamy but still textured.
  4. Taste and adjust with mustard, lemon, salt, or pepper.
  5. Serve on bread, crackers, lettuce leaves, or toast.

Notes

For the best flavor, chill the egg salad for 15 minutes before serving.
