Description

Creamy easy egg salad with hard-boiled eggs, mayonnaise, celery, herbs, lemon juice, and optional Dijon mustard.


Ingredients

4 hard-boiled eggs

2 tablespoons mayonnaise

1 celery stalk, finely chopped

1 tablespoon chopped dill or parsley

1 teaspoon lemon juice

Salt and black pepper, to taste

Optional: 1 teaspoon Dijon mustard


Instructions

  1. Peel and chop the hard-boiled eggs.
  2. Add eggs, mayonnaise, celery, herbs, lemon juice, salt, and pepper to a bowl.
  3. Add Dijon mustard if using.
  4. Stir gently until creamy.
  5. Taste and adjust seasoning.
  6. Serve as a sandwich, with crackers, on toast, or in lettuce cups.
