Description

Creamy high-protein cucumber salad with cottage cheese, chicken, taco seasoning, salsa, lime, and herbs.


Ingredients

1 English cucumber, sliced or chopped

1 cup cottage cheese

1 can chicken, drained, or 1 cup cooked shredded chicken

1 teaspoon taco seasoning

2 to 3 tablespoons salsa

1 tablespoon lime juice, optional

Fresh cilantro, parsley, or green onion, optional

Salt and black pepper, to taste


Instructions

  1. Slice or chop the cucumber.
  2. Pat cucumber dry if it is very juicy.
  3. Add cottage cheese, chicken, taco seasoning, and salsa to a bowl.
  4. Stir until creamy.
  5. Fold in cucumber gently.
  6. Add lime juice and herbs if using.
  7. Taste and adjust seasoning.
  8. Serve cold.

Notes

For the best crunch, mix the cucumber into the creamy base right before serving.
