1 English cucumber, sliced or chopped
1 cup cottage cheese
1 can chicken, drained, or 1 cup cooked shredded chicken
1 teaspoon taco seasoning
2 to 3 tablespoons salsa
1 tablespoon lime juice, optional
Fresh cilantro, parsley, or green onion, optional
Salt and black pepper, to taste
Instructions
- Slice or chop the cucumber.
- Pat cucumber dry if it is very juicy.
- Add cottage cheese, chicken, taco seasoning, and salsa to a bowl.
- Stir until creamy.
- Fold in cucumber gently.
- Add lime juice and herbs if using.
- Taste and adjust seasoning.
- Serve cold.
