Description

A hands-off, cheesy crockpot lasagna featuring layers of frozen ravioli, marinara sauce, a creamy ricotta mixture, and mozzarella cheese, all cooked to bubbling perfection.


Ingredients

  • 900 g frozen cheese ravioli (32 oz / two 16-oz packages)
  • 425 g ricotta cheese (15 oz / 1¾ cups)
  • 340 g shredded mozzarella (12 oz / 3 cups)
  • 50 g grated Parmesan (½ cup)
  • 1 large egg, beaten (50 g)
  • 800 g marinara sauce (28 oz / 3 cups)
  • 150 g yellow onion, diced (1 medium / 1 cup)
  • 3 cloves garlic (9 g), minced
  • 30 ml olive oil (2 tablespoons)
  • 1 tsp kosher salt (5 g)
  • ½ tsp black pepper (1.5 g)
  • 1 tsp dried Italian seasoning (1 g)

Instructions

  1. Heat 30 ml olive oil in a skillet over medium heat until shimmering, about 60–90 seconds. Add 150 g diced onion and sauté for 4–5 minutes until translucent and fragrant, then add 3 cloves minced garlic and cook for 30 seconds until aromatic.
  2. If making the meaty version, add 450 g halal ground beef or Italian sausage now. Brown for 6–8 minutes, breaking into small pieces with your wooden spoon. Drain excess fat.
  3. In a medium bowl, combine 425 g ricotta, 50 g grated Parmesan, 1 beaten large egg, ½ tsp black pepper, and 1 tsp Italian seasoning. Stir until smooth and uniform.
  4. Spread 120 ml marinara evenly on the bottom of the crockpot. Build three identical layers: a layer of frozen ravioli, one-third of the ricotta mixture, and 110 g shredded mozzarella. Repeat twice more, ending with a generous mozzarella layer on top.
  5. Pour the remaining marinara over the top layer. Cover with the lid and cook on LOW for 3–4 hours or HIGH for 1½–2 hours until heated through.
  6. For a golden crust, place the dish under a broiler for 2–3 minutes until the cheese is golden and bubbly.
  7. Let the dish rest uncovered for 10–15 minutes before serving.

Notes

For a meaty version, add browned ground beef or Italian sausage. This dish is freezer-friendly for up to 3 months.
