Description

Creamy White Wine Mushroom Chicken offers a rich, velvety sauce with tender chicken, earthy mushrooms, and aromatic herbs. This quick and easy recipe is perfect for weeknights or special occasions, pairing well with pasta, rice, or bread.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup sliced mushrooms (cremini or button)
  • 1 cup heavy cream
  • 1 cup dry white wine (such as Sauvignon Blanc)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Season chicken breasts with salt and pepper.
  2. Heat olive oil in a large skillet over medium heat.
  3. Sear chicken breasts for 5-7 minutes per side until golden brown and cooked through. Remove and set aside.
  4. Sauté mushrooms in the same skillet for 3-4 minutes until soft and browned.
  5. Add minced garlic and cook for 1 minute until fragrant.
  6. Pour in white wine, scraping the bottom of the skillet. Simmer for 3-4 minutes to reduce.
  7. Lower heat, add heavy cream and dried thyme. Stir and simmer for 2-3 minutes to thicken.
  8. Return chicken to the skillet, coating it with sauce. Cook for 2-3 minutes to heat through.
  9. Taste and adjust seasoning with salt and pepper.
  10. Garnish with fresh parsley and serve.

Notes

  • Use fresh ingredients for best flavor.
  • Choose a good quality dry white wine.
  • Experiment with different herbs like rosemary or oregano.
  • Simmer longer for a thicker sauce.
  • Consider adding Parmesan cheese or lemon juice before serving.
  • Add spinach, kale, or a mix of mushrooms for variations.
  • A pinch of red pepper flakes can add a spicy kick.
  • Cream cheese or Gruyère can make the sauce richer.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
  • Freeze for 2-3 months; reheat gently on the stovetop.
