Creamy Chicken Pesto Pasta Recipe

Description

Creamy chicken pesto pasta with tender chicken, cooked pasta, pesto, heavy cream, spinach, and Parmesan.


Ingredients

2 cups cooked pasta, such as penne or fettuccine

1 pound chicken breast, diced

1 tablespoon olive oil

Salt and black pepper, to taste

1 cup pesto

1 cup heavy cream

2 cups fresh spinach

Grated Parmesan cheese, for serving


Instructions

  1. Cook pasta according to package directions and reserve a little pasta water.
  2. Heat olive oil in a large skillet over medium heat.
  3. Season chicken with salt and pepper, then cook until golden and cooked through.
  4. Lower the heat and stir in pesto and heavy cream.
  5. Add spinach and cook until wilted.
  6. Toss in cooked pasta, adding pasta water if needed to loosen the sauce.
  7. Serve with Parmesan cheese.

Notes

Keep the heat moderate after adding pesto and cream so the sauce stays smooth.
