Description
Creamy chicken pesto pasta with tender chicken, cooked pasta, pesto, heavy cream, spinach, and Parmesan.
Ingredients

2 cups cooked pasta, such as penne or fettuccine
1 pound chicken breast, diced
1 tablespoon olive oil
Salt and black pepper, to taste
1 cup pesto
1 cup heavy cream
2 cups fresh spinach
Grated Parmesan cheese, for serving
Instructions
- Cook pasta according to package directions and reserve a little pasta water.
- Heat olive oil in a large skillet over medium heat.
- Season chicken with salt and pepper, then cook until golden and cooked through.
- Lower the heat and stir in pesto and heavy cream.
- Add spinach and cook until wilted.
- Toss in cooked pasta, adding pasta water if needed to loosen the sauce.
- Serve with Parmesan cheese.
Notes
Keep the heat moderate after adding pesto and cream so the sauce stays smooth.
