Creamy Chicken Pesto Pasta with Spinach Recipe

Description

Creamy chicken pesto pasta with spinach, Parmesan, chicken, and a smooth pesto cream sauce.


Ingredients

Scale

12 ounces pasta, such as penne or fettuccine

2 cups cooked chicken, shredded

2 cups fresh spinach

1 cup pesto sauce

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 tablespoon olive oil

Salt and black pepper, to taste

Optional: pine nuts for garnish


Instructions

  1. Cook pasta until al dente and reserve a little pasta water.
  2. Heat olive oil in a skillet over medium heat.
  3. Add chicken and spinach and cook until spinach wilts.
  4. Stir in pesto and heavy cream.
  5. Add cooked pasta and toss to coat.
  6. Stir in Parmesan and loosen with pasta water if needed.
  7. Season and serve hot.

Notes

Keep the heat moderate after adding cream so the sauce stays smooth.
