2 cups shredded cooked chicken
1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, minced
2 carrots, diced
3 cups chicken broth
1 cup heavy cream
Salt and black pepper, to taste
Fresh parsley, optional
Instructions
- Heat olive oil in a pot over medium heat.
- Cook onion until translucent.
- Add garlic and carrots and cook for 2 minutes.
- Pour in chicken broth and bring to a simmer.
- Add shredded chicken and heavy cream.
- Simmer 10 minutes until hot and slightly thickened.
- Season with salt and pepper and garnish with parsley.
