Fresh cowboy caviar with black beans, corn, peppers, tomatoes, avocado, cilantro, lime, and cumin.
Ingredients

1 can black beans, rinsed and drained
1 can corn, rinsed and drained
1 red bell pepper, diced
1 green bell pepper, diced
1 cup cherry tomatoes, halved
1/4 red onion, diced
1 avocado, diced
1/2 cup cilantro, chopped
Juice of 2 limes
1 teaspoon cumin
Salt and black pepper, to taste
Instructions
- Combine black beans, corn, bell peppers, tomatoes, red onion, avocado, and cilantro in a large bowl.
- Whisk lime juice, cumin, salt, and pepper in a small bowl.
- Pour dressing over the bean and vegetable mixture.
- Toss gently until combined.
- Taste and adjust lime, salt, or cumin.
- Serve with tortilla chips or as a topping.
Notes
Add avocado close to serving time so it stays fresh and green.
