Description

Fresh cowboy caviar with black beans, corn, peppers, tomatoes, avocado, cilantro, lime, and cumin.


Ingredients

1 can black beans, rinsed and drained

1 can corn, rinsed and drained

1 red bell pepper, diced

1 green bell pepper, diced

1 cup cherry tomatoes, halved

1/4 red onion, diced

1 avocado, diced

1/2 cup cilantro, chopped

Juice of 2 limes

1 teaspoon cumin

Salt and black pepper, to taste


Instructions

  1. Combine black beans, corn, bell peppers, tomatoes, red onion, avocado, and cilantro in a large bowl.
  2. Whisk lime juice, cumin, salt, and pepper in a small bowl.
  3. Pour dressing over the bean and vegetable mixture.
  4. Toss gently until combined.
  5. Taste and adjust lime, salt, or cumin.
  6. Serve with tortilla chips or as a topping.

Notes

Add avocado close to serving time so it stays fresh and green.
