Ingredients

- 1 can black beans, rinsed and drained
- 1 can corn, rinsed and drained
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1/4 red onion, diced
- 1 avocado, diced
- 1/2 cup cilantro, chopped
- Juice of 2 limes
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Combine black beans, corn, red bell pepper, green bell pepper, cherry tomatoes, red onion, avocado, and cilantro in a large bowl.
- Whisk together lime juice, cumin, salt, and pepper in a separate bowl.
- Pour the dressing over the bean and vegetable mixture and toss to combine.
- Serve with tortilla chips for dipping.
Notes
Rinse beans and corn well to remove excess sodium. For extra kick, add jalapeños or hot sauce. Allow chilling for at least an hour before serving.
