Description

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (14.5 oz) diced tomatoes
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Tortilla strips for topping
  • 1 avocado, diced
  • Fresh cilantro, for garnish

Instructions

  1. Sauté the onions and garlic in a large pot until soft.
  2. Add the shredded chicken, black beans, corn, diced tomatoes, chicken broth, cumin, chili powder, salt, and pepper.
  3. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Serve hot, topped with crispy tortilla strips, diced avocado, and fresh cilantro.

Notes

For a vegetarian version, replace chicken with additional beans or lentils and use vegetable broth.
