Chicken Quesadilla Recipe (Crispy and Cheesy)

Description

Crispy chicken quesadilla with shredded chicken, melted cheese, peppers, onions, salsa, and sour cream.


Ingredients

2 cups cooked shredded chicken

1 cup shredded cheese, such as cheddar, Monterey Jack, or a blend

1 cup bell peppers, diced

1/2 cup onion, diced

4 flour tortillas

2 tablespoons olive oil

Sour cream, optional

Salsa, optional


Instructions

  1. Heat a little olive oil in a skillet over medium heat.
  2. Cook bell peppers and onion until softened.
  3. Place a tortilla in the skillet.
  4. Add cheese, chicken, peppers, onion, and more cheese.
  5. Fold the tortilla or top with a second tortilla.
  6. Cook until golden on one side, then flip carefully.
  7. Cook until crisp and the cheese is melted.
  8. Slice and serve with salsa and sour cream.

Notes

Use cheese on both sides of the filling so the quesadilla holds together.
