Description
Crispy chicken quesadilla with shredded chicken, melted cheese, peppers, onions, salsa, and sour cream.

2 cups cooked shredded chicken
1 cup shredded cheese, such as cheddar, Monterey Jack, or a blend
1 cup bell peppers, diced
1/2 cup onion, diced
4 flour tortillas
2 tablespoons olive oil
Sour cream, optional
Salsa, optional
Instructions
- Heat a little olive oil in a skillet over medium heat.
- Cook bell peppers and onion until softened.
- Place a tortilla in the skillet.
- Add cheese, chicken, peppers, onion, and more cheese.
- Fold the tortilla or top with a second tortilla.
- Cook until golden on one side, then flip carefully.
- Cook until crisp and the cheese is melted.
- Slice and serve with salsa and sour cream.
Notes
Use cheese on both sides of the filling so the quesadilla holds together.
