Colorful charred vegetable medley with zucchini, onion, carrots, cauliflower, sugar snap peas, and tomatoes.
Ingredients

1 medium zucchini, cut lengthwise then sliced
1 medium onion, sliced into 8 sections
1 cup carrots, chunked
1 cup cauliflower florets
1 tablespoon olive oil
1 handful sugar snap peas
1 cup grape tomatoes, halved
Salt and black pepper, to taste
Instructions
- Preheat grill to medium, about 350 degrees F.
- Add zucchini, onion, carrots, and cauliflower to a large bowl.
- Drizzle with olive oil and toss to coat.
- Place vegetables in a grill pan.
- Cook about 8 minutes, turning frequently.
- Add sugar snap peas and grape tomatoes.
- Cook 2 to 3 minutes more.
- Transfer to a platter, season, and serve immediately.
Notes
Add delicate vegetables near the end so they stay bright and do not collapse.
