Charred Vegetable Medley Recipe (Grilled Vegetables)

Description

Colorful charred vegetable medley with zucchini, onion, carrots, cauliflower, sugar snap peas, and tomatoes.


Ingredients

Scale

1 medium zucchini, cut lengthwise then sliced

1 medium onion, sliced into 8 sections

1 cup carrots, chunked

1 cup cauliflower florets

1 tablespoon olive oil

1 handful sugar snap peas

1 cup grape tomatoes, halved

Salt and black pepper, to taste


Instructions

  1. Preheat grill to medium, about 350 degrees F.
  2. Add zucchini, onion, carrots, and cauliflower to a large bowl.
  3. Drizzle with olive oil and toss to coat.
  4. Place vegetables in a grill pan.
  5. Cook about 8 minutes, turning frequently.
  6. Add sugar snap peas and grape tomatoes.
  7. Cook 2 to 3 minutes more.
  8. Transfer to a platter, season, and serve immediately.

Notes

Add delicate vegetables near the end so they stay bright and do not collapse.
