Description

Creamy crunchy broccoli salad with carrots, red onion, dried fruit, nuts, and apple cider vinegar dressing.


Ingredients

4 cups broccoli florets, chopped small

1 cup shredded carrots

1 cup red onion, thinly sliced or diced

1 cup raisins or dried cranberries

1/2 cup walnuts or pecans, chopped

1 cup mayonnaise

2 tablespoons apple cider vinegar

2 tablespoons sugar, optional

Salt and black pepper, to taste


Instructions

  1. Add broccoli, carrots, red onion, dried fruit, and nuts to a large bowl.
  2. Whisk mayonnaise, apple cider vinegar, sugar if using, salt, and pepper.
  3. Pour dressing over the salad.
  4. Toss until the broccoli is well coated.
  5. Chill for at least 20 minutes if time allows.
  6. Taste and adjust seasoning before serving.

Notes

Chop broccoli small so every bite gets dressing and crunch.
