Description

Fresh avocado salad with tomatoes, cucumber, red onion, lime, olive oil, salt, and pepper.


Ingredients

2 ripe avocados, diced

1 cup cherry tomatoes, halved

1 cucumber, diced

1/4 cup red onion, thinly sliced

2 tablespoons lime juice

1 tablespoon olive oil

Salt and black pepper, to taste

Optional: cilantro, parsley, feta, or jalapeno


Instructions

  1. Dice avocados, tomatoes, cucumber, and red onion.
  2. Add vegetables to a large bowl.
  3. Drizzle with lime juice and olive oil.
  4. Season with salt and black pepper.
  5. Toss gently so avocado stays in pieces.
  6. Add optional herbs, feta, or jalapeno if desired.
  7. Serve immediately.

Notes

Use ripe but firm avocados so the salad stays creamy without turning mushy.
