1 cup cherry tomatoes, halved
1 cucumber, diced
1/4 cup red onion, thinly sliced
2 tablespoons lime juice
1 tablespoon olive oil
Salt and black pepper, to taste
Optional: cilantro, parsley, feta, or jalapeno
Instructions
- Dice avocados, tomatoes, cucumber, and red onion.
- Add vegetables to a large bowl.
- Drizzle with lime juice and olive oil.
- Season with salt and black pepper.
- Toss gently so avocado stays in pieces.
- Add optional herbs, feta, or jalapeno if desired.
- Serve immediately.

Use ripe but firm avocados so the salad stays creamy without turning mushy.
