This delicious vegetable lasagna is a perfect dish for a hearty family meal, packed with layers of pasta, fresh vegetables, and rich marinara sauce.

- 9 lasagna noodles
- 2 cups marinara sauce
- 1 zucchini, sliced
- 1 bell pepper, diced
- 1 cup mushrooms, chopped
- 1 cup spinach, wilted
- 15 oz ricotta cheese
- 2 cups mozzarella cheese, shredded
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions; drain and set aside.
- In a large skillet, sauté zucchini, bell pepper, and mushrooms until tender.
- Add wilted spinach and season with Italian seasoning, salt, and pepper.
- Spread a layer of marinara sauce in a baking dish, then layer 3 lasagna noodles on top.
- Add half of the ricotta cheese, sautéed vegetables, and a third of the mozzarella cheese.
- Repeat the layers, finishing with noodles, marinara sauce, and the remaining mozzarella and Parmesan cheese on top.
- Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 15 minutes until golden brown.
- Let it cool for 10 minutes before serving.
Notes
Feel free to add more veggies or substitute any cheese for your preference.
