Description

A hearty and flavorful vegetable lasagna made with layers of fresh vegetables and creamy ricotta cheese.


Ingredients

  • 9 lasagna noodles
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 zucchini, sliced
  • 1 yellow squash, sliced
  • 1 bell pepper, chopped
  • 2 cups spinach
  • 1 jar (28 ounces) marinara sauce
  • 15 ounces ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook the lasagna noodles according to the package instructions; drain.
  3. In a skillet, heat olive oil over medium heat; add onions and garlic, and sauté until softened.
