Ingredients

  • 680 g Brussels sprouts, trimmed and halved
  • 15 ml oil (canola or grapeseed)
  • ½ tsp Diamond Crystal kosher salt
  • 30 ml balsamic vinegar
  • 15 ml honey
  • 3 medium zucchini, cut into sticks
  • 60 g panko breadcrumbs
  • 30 g grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1 beaten egg or 60 g Greek yogurt
  • 900 g baby potatoes, halved
  • 30 ml oil
  • 4 minced garlic cloves
  • 1 tsp chopped rosemary
  • 800 g sweet potatoes, cut into wedges
  • 30 ml oil
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • 450 g green beans, trimmed
  • 15 ml oil
  • 30 g toasted sliced almonds
  • 300 g broccoli florets
  • 60 g shredded cheddar
  • 1 beaten egg
  • 30 g breadcrumbs
  • ¼ tsp salt

Instructions

  1. Preheat air fryer to 200°C (390°F) for 3 minutes.
  2. Toss Brussels sprouts with oil and salt, arrange cut side down. Air-fry for 10 minutes, shake, and cook 2-5 more minutes until browned.
  3. Warm balsamic vinegar and honey, then toss with sprouts before serving.
  4. Cut zucchini into sticks, pat dry, and dip in egg or yogurt. Coat with breadcrumb mixture and spray with oil.
  5. Air-fry zucchini for 8-10 minutes, flipping halfway.
  6. Microwave baby potatoes for 4-5 minutes, drain. Toss with oil, garlic, rosemary, and salt.
  7. Air-fry potatoes for 15-20 minutes, shaking every 5 minutes until crisp.
  8. Cut sweet potatoes into wedges, soak for 10 minutes, then toss with oil, smoked paprika, garlic powder, and salt.
  9. Air-fry sweet potatoes for 16-20 minutes, flipping once until crisp.
  10. Trim green beans, toss with oil and salt, air-fry for 6-8 minutes until blistered.
  11. Toss warm beans with almonds and lemon juice.
  12. Pulse broccoli in food processor, squeeze out moisture. Combine with cheddar, egg, breadcrumbs, and salt.
  13. Form into mounds, coat with oil. Air-fry for 10-12 minutes until golden.
