Description

A hearty vegetable lasagna filled with layers of rich tomato sauce, spinach, and ricotta cheese.


Ingredients

  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 3 cups spinach, cooked and drained
  • 4 cups marinara sauce
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon Italian herbs

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions.
  3. Mix the ricotta cheese with spinach, salt, pepper, and herbs.
  4. Spread a layer of marinara sauce in a baking dish.
  5. Layer 3 lasagna noodles, half of the ricotta mixture, a third of the mozzarella, and a layer of marinara.
  6. Repeat the layers, finishing with marinara sauce and remaining mozzarella on top.
  7. Bake for 45 minutes until bubbly.
  8. Let it cool for 10 minutes before serving.

Notes

For extra flavor, add fresh basil between layers.
