Description

A hearty and flavorful vegetarian lasagna made with layers of fresh vegetables, ricotta, and marinara sauce.


Ingredients

  • 9 lasagna noodles
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 zucchini, sliced
  • 1 red bell pepper, chopped
  • 1 cup spinach
  • 2 cups marinara sauce
  • 15 ounces ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions; drain and set aside.
  3. Heat the olive oil in a pan and sauté the onion and garlic until fragrant.
  4. Add the zucchini and bell pepper; cook until tender.
  5. Stir in the spinach until wilted, then season with salt and pepper.
  6. Spread a layer of marinara sauce on the bottom of a baking dish.
  7. Layer three lasagna noodles, half of the ricotta, half of the vegetable mixture, and a layer of mozzarella.
  8. Repeat the layers and top with remaining noodles, marinara sauce, mozzarella, and Parmesan.
  9. Bake for 30-35 minutes until cheese is bubbly and lightly golden.
  10. Let it cool for 10 minutes before slicing and serving.

Notes

For added flavor, you can include oregano or basil in the vegetable mix.
