Ingredients

- 2 cups broccoli florets
- 1 red bell pepper, chopped
- 1 zucchini, sliced
- 1 yellow squash, sliced
- 1 cup cherry tomatoes
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt and pepper, to taste
Instructions
- Preheat the oven to 425°F (220°C).
- Toss all the vegetables in a large bowl with olive oil, garlic powder, salt, and pepper.
- Spread the vegetables on a baking sheet in a single layer.
- Roast for 25-30 minutes or until edges are golden brown.
- Serve warm and enjoy!
