Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and cook until translucent, about 5 minutes. Add garlic and ginger, cooking until fragrant, about 1 minute.
  3. Stir in ground turmeric, cumin, coriander, and smoked paprika. Cook for another minute to release the flavors.
  4. Add the rinsed lentils and stir to coat them with the spices and onion mixture.
  5. Pour in the vegetable broth and bring the mixture to a boil.
  6. Reduce heat and simmer for 25-30 minutes until the lentils are tender.
  7. Add the diced carrots and bell pepper, cooking for an additional 5-10 minutes until the vegetables are soft.
  8. Pour in the coconut milk, stirring well. Allow the soup to heat through for about 5 more minutes.
  9. Taste and adjust seasoning with salt and pepper.
  10. Serve warm, garnished with fresh cilantro and lemon wedges, if desired.
