Delicious and easy BBQ Jackfruit Sandwiches featuring tender jackfruit cooked with smoky spices and your favorite BBQ sauce, served on a hamburger bun with vegan coleslaw.

- 2 14.5-ounce cans jackfruit (in brine)
- 1 cup your favorite BBQ sauce (plus more if needed)
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon salt
- Hamburger buns
- Vegan coleslaw
Instructions
- Remove the jackfruit from the cans and drain off the brine completely. Set the jackfruit aside to prepare for cooking.
- Place a large non-stick pan over medium heat and add a splash of oil if your pan isn’t non-stick. Add the drained jackfruit and cook for 5 to 8 minutes, stirring occasionally to warm it through.
- Using a potato masher or the back of a fork, mash the jackfruit until it resembles pulled pork texture. Remove any seeds or seed casings you can, though it’s okay if some remain as they are safe to eat.
- Sprinkle the paprika, garlic powder, and salt over the mashed jackfruit. Stir well to evenly distribute the spices. Pour in the BBQ sauce and mix thoroughly. Cook for an additional 1 to 2 minutes, stirring frequently to let the flavors combine.
- Spoon the BBQ jackfruit mixture onto hamburger buns. Top each sandwich with a generous helping of vegan coleslaw. Serve immediately and enjoy your plant-based BBQ delight!
