  • 1/4 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 2 large egg yolks (lightly beaten)

Instructions

  1. Prepare the Crust: In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined. Divide the mixture evenly among serving cups or small glasses, pressing it down firmly to form a crust layer.
  2. Make the Cheesecake Filling: In a mixing bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar and vanilla extract, mixing until well combined and creamy. Gently fold in the whipped heavy cream until fully incorporated. Set aside.
  3. Prepare the Vanilla Custard: In a saucepan, heat the whole milk and granulated sugar over medium heat until it starts to steam, but do not let it boil. In a small bowl, whisk together the cornstarch with a few tablespoons of the warm milk until smooth. Slowly whisk the cornstarch mixture back into the saucepan with the warm milk. Continue to cook, stirring constantly, until the mixture thickens (about 5-7 minutes). Remove the saucepan from heat and whisk a small amount of the hot mixture into the beaten egg yolks to temper them. Then, gradually whisk the egg yolk mixture back into the saucepan.
