  • 5 tablespoons unsalted butter, melted
  • 3/4 cup heavy cream (for chocolate ganache)
  • 6 ounces semi-sweet chocolate, coarsely chopped
  • 1 cup cold heavy cream (for filling)
  • 8 ounces full-fat brick cream cheese, softened
  • 1 1/2 cups creamy peanut butter
  • 3/4 cup confectioners’ sugar
  • 1 teaspoon pure vanilla extract
  • Whipped cream (optional, for topping)
  • 1/4 cup crushed Reese’s Pieces (optional, for garnish)
  • 1/4 cup chopped peanuts (optional, for garnish)

Instructions

  1. Preheat oven to 350°F (175°C). Process 22 Oreo cookies into fine crumbs. Mix with 5 tablespoons melted unsalted butter. Press firmly into a 9-inch pie plate.
  2. Bake for 8-10 minutes. Let cool completely on a wire rack.
  3. In a large bowl, beat 8 ounces softened cream cheese until smooth. Add 1 1/2 cups creamy peanut butter and beat until light and fluffy.
  4. Gradually add 3/4 cup confectioners’ sugar and 1 teaspoon vanilla extract; beat until smooth.
  5. In a separate, chilled bowl, whip 1 cup cold heavy cream until stiff peaks form.
  6. Gently fold the whipped cream into the peanut butter mixture in two additions until light and uniformly fluffy. Do not overmix.
  7. Spoon the peanut butter filling into the cooled crust, spreading evenly.
  8. Cover loosely and refrigerate for a minimum of 4 hours, or preferably overnight, until completely set.
  9. Heat 3/4 cup heavy cream until simmering. Pour over 6 ounces coarsely chopped semi-sweet chocolate. Let sit for 5 minutes, then stir until smooth. Let cool slightly to thicken.
  10. Before serving, drizzle cooled chocolate ganache or sprinkle with optional whipped cream, 1/4 cup crushed Reese’s Pieces, and 1/4 cup chopped peanuts. Slice with a hot knife and serve cold.
  11. Store leftover pie covered in the refrigerator for up to 3-4 days.
