- 22 regular Oreo cookies
- 5 tablespoons unsalted butter, melted
- 3/4 cup heavy cream (for chocolate ganache)
- 6 ounces semi-sweet chocolate, coarsely chopped
- 1 cup cold heavy cream (for filling)
- 8 ounces full-fat brick cream cheese, softened
- 1 1/2 cups creamy peanut butter
- 3/4 cup confectioners’ sugar
- 1 teaspoon pure vanilla extract
- Whipped cream (optional, for topping)
- 1/4 cup crushed Reese’s Pieces (optional, for garnish)
- 1/4 cup chopped peanuts (optional, for garnish)
Instructions
- Preheat oven to 350°F (175°C). Process 22 Oreo cookies into fine crumbs. Mix with 5 tablespoons melted unsalted butter. Press firmly into a 9-inch pie plate.
- Bake for 8-10 minutes. Let cool completely on a wire rack.
- In a large bowl, beat 8 ounces softened cream cheese until smooth. Add 1 1/2 cups creamy peanut butter and beat until light and fluffy.
- Gradually add 3/4 cup confectioners’ sugar and 1 teaspoon vanilla extract; beat until smooth.
- In a separate, chilled bowl, whip 1 cup cold heavy cream until stiff peaks form.
- Gently fold the whipped cream into the peanut butter mixture in two additions until light and uniformly fluffy. Do not overmix.
- Spoon the peanut butter filling into the cooled crust, spreading evenly.
- Cover loosely and refrigerate for a minimum of 4 hours, or preferably overnight, until completely set.
- Heat 3/4 cup heavy cream until simmering. Pour over 6 ounces coarsely chopped semi-sweet chocolate. Let sit for 5 minutes, then stir until smooth. Let cool slightly to thicken.
- Before serving, drizzle cooled chocolate ganache or sprinkle with optional whipped cream, 1/4 cup crushed Reese’s Pieces, and 1/4 cup chopped peanuts. Slice with a hot knife and serve cold.
- Store leftover pie covered in the refrigerator for up to 3-4 days.
