Description

A refreshing and nutritious salad packed with vibrant vegetables and protein-rich quinoa, perfect for a light meal or side dish.


Ingredients

Scale
  • 1 cup quinoa
  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/2 cup red onion, finely chopped
  • 1/4 cup parsley, chopped
  • 1/4 cup feta cheese, crumbled
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water.
  2. Boil the water and add the quinoa. Reduce heat to low and cover.
  3. Simmer for about 15 minutes, or until water is absorbed.
  4. Fluff the quinoa with a fork and let it cool.
  5. Combine the cooled quinoa, tomatoes, cucumber, bell pepper, red onion, parsley, and feta in a large bowl.
  6. Whisk together olive oil, lemon juice, salt, and pepper in a small bowl.
  7. Pour the dressing over the salad and toss to combine.

Notes

Serve chilled or at room temperature. This salad keeps well in the fridge for up to three days.
