Ingredients

- 1 cup quinoa
- 2 cups water
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/2 cup red onion, finely chopped
- 1/4 cup parsley, chopped
- 1/4 cup feta cheese, crumbled
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water.
- Boil the water and add the quinoa. Reduce heat to low and cover.
- Simmer for about 15 minutes, or until water is absorbed.
- Fluff the quinoa with a fork and let it cool.
- Combine the cooled quinoa, tomatoes, cucumber, bell pepper, red onion, parsley, and feta in a large bowl.
- Whisk together olive oil, lemon juice, salt, and pepper in a small bowl.
- Pour the dressing over the salad and toss to combine.
Notes
Serve chilled or at room temperature. This salad keeps well in the fridge for up to three days.
