  • 2 garlic cloves, minced

  • 1 cup shredded cheddar cheese
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1 tsp fresh basil or oregano (optional)
  • Salt and pepper to taste

Instructions

  1. In a pot, sauté 1 medium yellow onion until softened. Add 2 minced garlic cloves and 1 tsp fresh basil or oregano (if using); cook for 1 minute until fragrant.
  2. Stir in 2 cups chopped ripe tomatoes and 4 cups low-sodium vegetable broth. Bring to a simmer, then cover and cook for 20-25 minutes to develop flavors.
  3. Remove from heat and blend the soup until desired consistency. Return to low heat. Stir in 1 cup heavy cream. Season with salt and pepper to taste.
  4. In a bowl, combine 1 cup all-purpose flour, 1 tsp baking powder, 1 cup shredded cheddar cheese, salt, and pepper to form a loose mixture suitable for dumplings. Rest for 10-15 minutes.
  5. Ensure soup is at a gentle simmer. Using two teaspoons, scoop small portions of the dumpling mixture and gently drop into the simmering soup. Do not overcrowd; cook in batches if needed.
  6. Cover the pot and simmer gently for 10-12 minutes until dumplings are puffy and cooked through. You can carefully remove one to check for doneness.
  7. Gently stir the cooked dumplings into the soup. Turn off the heat and let the soup and dumplings rest, covered, for another 5 minutes to allow flavors to meld.
  8. Ladle generous portions of the hot soup with cheesy dumplings into bowls. Garnish with fresh basil (if available) or extra shredded cheese. Serve immediately.
