  • 1 medium onion, finely diced
  • 3 cloves garlic, minced
  • 2 (14.5 oz) cans diced tomatoes (with juice)
  • 1 cup vegetable broth
  • 1 cup heavy cream
  • 1 tablespoon sugar (optional)
  • Salt and pepper to taste
  • 1 teaspoon dried oregano
  • 1/2 cup fresh basil leaves, chopped (plus extra for garnish)
  • 4 slices of your preferred bread (sourdough or whole grain recommended)
  • 4 slices of cheddar cheese (or your cheese of choice)
  • 2 tablespoons butter, softened

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and sauté until translucent, about 5 minutes.
  2. Stir in garlic and cook for 1 minute until fragrant.
  3. Add diced tomatoes, vegetable broth, sugar (if using), oregano, salt, and pepper. Bring to a simmer.
  4. Reduce heat and simmer for 20 minutes, stirring occasionally.
  5. Remove from heat. Stir in heavy cream and chopped basil.
  6. Blend soup until smooth using an immersion blender or a regular blender in batches. Adjust seasoning to taste.
  7. Keep soup warm on low heat.
  8. Preheat a skillet over medium heat. Butter one side of each bread slice.
  9. Place two bread slices, buttered side down, in the skillet. Top with cheese.
  10. Cover with remaining bread slices, buttered side up.
  11. Cook for 3-4 minutes until golden brown. Flip and cook the other side until golden and cheese is melted.
  12. Remove from skillet, let cool slightly, then slice diagonally.
  13. Ladle soup into bowls, garnish with basil, and serve hot with grilled cheese sandwiches.
