    • 8 oz mascarpone cheese
    • 1 cup heavy cream
    • 1/4 cup powdered sugar

    • 1/4 cup brewed espresso (cooled)
    • 2 tablespoons coffee liqueur (optional)
  • For Garnish:
    • Cocoa powder (for dusting)
    • Chocolate shavings (optional)
    • Fresh berries (optional)

Instructions

  1. In a mixing bowl, whisk together the flour, eggs, milk, melted butter, sugar, vanilla extract, and salt until smooth. Let the batter rest for about 15 minutes.
  2. Heat a non-stick skillet or crêpe pan over medium heat. Lightly grease with butter or oil.
  3. Pour about 1/4 cup of batter into the pan, swirling to coat the bottom evenly. Cook for about 1-2 minutes until the edges start to lift and the bottom is lightly golden. Flip and cook for another 30 seconds. Repeat with the remaining batter, stacking the cooked crêpes on a plate.
  4. In a mixing bowl, beat the heavy cream until soft peaks form.
  5. In another bowl, mix the mascarpone cheese, powdered sugar, vanilla extract, cooled espresso, and coffee liqueur (if using) until smooth. Gently fold in the whipped cream until fully combined.
  6. Take a crêpe and place a generous spoonful of the tiramisu filling in the center. Fold the crêpe over the filling, and then fold again to create a triangle or simply roll it up.
  7. Continue with the remaining crêpes and filling.
  8. Place the stuffed crêpes on a serving plate and dust with cocoa powder. Optionally, garnish with chocolate shavings and fresh berries.
