Quick Tilapia in Roasted Pepper Sauce


Ingredients

  • 4 tilapia fillets (about 6 oz each)
  • 2 tablespoons olive oil
  • 1 red bell pepper (roasted and diced)
  • 1 yellow bell pepper (roasted and diced)
  • 2 cloves garlic (minced)
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup vegetable broth (or chicken broth)
  • Fresh parsley (for garnish, optional)
  • Lemon wedges (for serving, optional)

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Stir in the diced roasted red and yellow bell peppers, smoked paprika, salt, and black pepper. Cook for another 2-3 minutes.
  4. Pour in the vegetable broth and bring to a simmer.
  5. Carefully place the tilapia fillets into the skillet. Spoon some of the sauce over the top of the fillets.
  6. Cover and cook for about 5-7 minutes, or until the tilapia is cooked through and flakes easily with a fork.
  7. Remove from heat and garnish with fresh parsley if desired.
  8. Serve the tilapia with the roasted pepper sauce spooned over the top, alongside lemon wedges for squeezing.
