- 1 pork tenderloin
- 1.5 cups bread crumbs
- 1 cup cranberries
- 1/2 cup walnuts
- 2 tsp thyme
- 2 tsp rosemary
- 1 onion, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- Olive oil for sautéing
- 1/4 cup chicken broth
Instructions
- Preheat your oven to 375°F (190°C).
- Sauté onions and garlic in a skillet with olive oil until soft.
- In a bowl, combine bread crumbs, cranberries, walnuts, thyme, rosemary, salt, and pepper.
- Cut a slit in the pork tenderloin lengthwise and stuff it with the breadcrumb mixture. Tie it closed with kitchen twine.
- Sear the stuffed tenderloin in the skillet until golden brown.
- Transfer it to a baking dish, add chicken broth, and bake for 25-30 minutes until cooked through.
Notes
Let the pork rest for 10 minutes before slicing to retain juices.
