Description

A succulent pork tenderloin stuffed with a delicious blend of bread crumbs, cranberries, and walnuts, perfect for festive gatherings.


Ingredients

  • 1 pork tenderloin
  • 1.5 cups bread crumbs
  • 1 cup cranberries
  • 1/2 cup walnuts
  • 2 tsp thyme
  • 2 tsp rosemary
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil for sautéing
  • 1/4 cup chicken broth

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Sauté onions and garlic in a skillet with olive oil until soft.
  3. In a bowl, combine bread crumbs, cranberries, walnuts, thyme, rosemary, salt, and pepper.
  4. Cut a slit in the pork tenderloin lengthwise and stuff it with the breadcrumb mixture. Tie it closed with kitchen twine.
  5. Sear the stuffed tenderloin in the skillet until golden brown.
  6. Transfer it to a baking dish, add chicken broth, and bake for 25-30 minutes until cooked through.

Notes

Let the pork rest for 10 minutes before slicing to retain juices.
