Ingredients

  • 250 g (8.8 oz) Pasta (any short pasta, like fusilli or penne)
  • 150 g (5.3 oz) Sun-Dried Tomatoes (packed in oil)
  • 30 g (1 oz) Fresh Basil (or 1 tsp dried basil)
  • 100 g (3.5 oz) Feta Cheese (or dairy-free feta for vegan)
  • 60 ml (¼ cup) Olive Oil (extra virgin)
  • 30 ml (2 tbsp) Balsamic Vinegar (or red wine vinegar)
  • Salt (to taste)
  • Black Pepper (to taste)

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente, about 8–10 minutes. Drain and rinse under cold water.
  2. Prepare the ingredients: Chop the sun-dried tomatoes, slice the basil, and crumble the feta cheese.
  3. Combine everything: In a large mixing bowl, combine the cooled pasta, sun-dried tomatoes, basil, and feta. Drizzle with olive oil and balsamic vinegar, then toss to combine.
  4. Season and serve: Taste and season with salt and freshly ground black pepper. Serve immediately or chill for about 30 minutes to meld flavors.
