Instructions

  1. Prepare the dough: In a large bowl, cream softened butter and sugar until light and fluffy (about 2–3 minutes). Add vanilla extract and mix. Gradually add flour and salt, mixing on low speed until the dough comes together into a soft dough.
  2. Shape the cookies: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper. Roll tablespoon-sized portions of dough into balls and place them about 2 inches apart. Gently press your thumb into the center of each ball to make an indentation, but not all the way through.
  3. Add the plum filling: Using a small spoon or piping bag, fill each thumbprint with about ½ teaspoon of plum jam. Do not overfill.
