Ingredients

  • 2 cups sugar cookie crumbs (or crushed shortbread / vanilla wafers)
  • 5 tablespoons unsalted butter, melted
  • 2 tablespoons sugar
  • ½ teaspoon vanilla extract
  • 24 oz (680g) cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 3 large eggs, room temp
  • 2 teaspoons vanilla extract
  • ½ teaspoon almond extract (optional)
  • 2 tablespoons cornstarch
  • ¾ cup crushed sugar cookies or holiday sprinkles
  • 4 oz (115g) cream cheese, softened (for frosting)
  • 3 tablespoons unsalted butter, softened (for frosting)
  • 1¾ cups powdered sugar (for frosting)
  • 1 teaspoon vanilla (for frosting)
  • 1 tablespoon milk or heavy cream (for frosting)
  • Holiday sprinkles (red + green mix)
  • Optional: sugar cookie pieces + festive candy pearls

Instructions

  1. Preheat oven to 325°F (160°C). Mix sugar cookie crumbs, melted butter, and vanilla. Press firmly into the bottom of a 9-inch springform pan. Bake for 8 minutes, then cool.
  2. Beat cream cheese and sugar until smooth. Mix in sour cream, vanilla, and almond extract. Sprinkle in cornstarch and mix. Add eggs one at a time on low speed. Fold in crushed cookies or sprinkles gently.
  3. Pour filling over crust. Wrap pan bottom in foil and place in a water bath. Bake for 60–75 minutes until edges are set and center is slightly wobbly. Turn oven off, crack door, and let cool inside for 1 hour. Chill for at least 4 hours or overnight.
  4. Beat cream cheese and butter for frosting. Add powdered sugar, mix in vanilla, and a splash of milk to smooth. Spread over chilled cheesecake.
  5. Decorate with festive sprinkles and optional mini sugar cookies or Christmas pearls.
