Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and grease a donut pan.
  2. Mix Dry Ingredients: In a mixing bowl, combine the glutinous rice flour, granulated sugar, baking powder, and salt.
  3. Combine Wet Ingredients: In another bowl, mix the coconut milk, pureed strawberries, and vanilla extract until well combined.
  4. Combine Mixtures: Pour the wet ingredients into the dry ingredients and mix until smooth and well combined.
  5. Fill the Pan: Spoon the batter into the prepared donut pan, filling each cavity about 3/4 full.
  6. Bake: Bake in the preheated oven for about 15–18 minutes, or until the donuts are set and a toothpick inserted comes out clean.
  7. Cool: Allow the donuts to cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.
  8. Make the Glaze: In a small bowl, whisk together the powdered sugar and milk until smooth. Adjust the consistency by adding more milk or powdered sugar as needed.
  9. Glaze the Donuts: Once the donuts are completely cool, dip the tops in the glaze or drizzle it over the donuts.
  10. Garnish: Top with sliced fresh strawberries and shredded coconut if desired.
