- 1/4 cup chopped nuts (such as almonds or pecans, optional)
- 1/4 cup shredded coconut (optional)
Instructions
- In a mixing bowl, beat the softened cream cheese until smooth.
- Gradually add the powdered sugar and vanilla extract, mixing until well combined.
- Gently fold in the whipped heavy cream until the mixture is light and fluffy.
- Carefully fold in the diced strawberries until evenly distributed.
- Place the cheesecake filling in the refrigerator for about 15–20 minutes to firm up slightly.
- Once chilled, use a small cookie scoop or spoon to scoop out portions of the cheesecake filling and roll them into balls (about 1 inch in diameter).
- Place the formed balls on a baking sheet lined with parchment paper and refrigerate for another 30 minutes to firm up.
- In a bowl, combine the graham cracker crumbs, melted white chocolate chips, chopped nuts, and shredded coconut (if using). Mix until well combined.
- Remove the cheesecake balls from the refrigerator. Roll each ball in the crunch coating mixture until fully covered.
- Place the coated bites back on the baking sheet.
