Instructions

  1. In a mixing bowl, beat the softened cream cheese until smooth.
  2. Gradually add the powdered sugar and vanilla extract, mixing until well combined.
  3. Gently fold in the whipped heavy cream until the mixture is light and fluffy.
  4. Carefully fold in the diced strawberries until evenly distributed.
  5. Place the cheesecake filling in the refrigerator for about 15–20 minutes to firm up slightly.
  6. Once chilled, use a small cookie scoop or spoon to scoop out portions of the cheesecake filling and roll them into balls (about 1 inch in diameter).
  7. Place the formed balls on a baking sheet lined with parchment paper and refrigerate for another 30 minutes to firm up.
  8. In a bowl, combine the graham cracker crumbs, melted white chocolate chips, chopped nuts, and shredded coconut (if using). Mix until well combined.
