- 1/2 cup soy sauce (low-sodium preferred)
- 1/3 cup honey
- 2 tablespoons rice vinegar (or apple cider vinegar)
- 2 cloves garlic (minced)
- 1 teaspoon fresh ginger (grated)
- 1 tablespoon sesame oil
- 1 tablespoon cornstarch (optional, for thickening)
- 2 tablespoons water (if using cornstarch)
- Sesame seeds (for garnish)
- Chopped green onions (for garnish)
Instructions
- In a bowl, whisk together the soy sauce, honey, rice vinegar, minced garlic, grated ginger, and sesame oil.
- Place the chicken thighs in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring it is well coated. Marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
- Heat a little oil in a large skillet over medium-high heat until shimmering.
- Remove the chicken from the marinade, reserving the marinade for later. Add the chicken to the skillet and sear for 5–7 minutes on each side, or until golden brown and cooked through.
- Once the chicken is cooked, add the reserved marinade to the skillet and bring it to a simmer.
- If a thicker sauce is desired, mix the cornstarch with water to create a slurry, then add it to the skillet and stir until the sauce thickens, about 2–3 minutes.
- Serve the chicken drizzled with the sauce and garnish with sesame seeds and chopped green onions.
