Description

A warm, rustic-elegant Apple Brie Phyllo Galette layered with creamy brie, tender apples, and fragrant thyme.


Ingredients

  • 9 Tbsp salted butter (melted with herbs for flavor)
  • 2 1/4 teaspoons fresh thyme leaves (aromatic herb accent)
  • 9 ounces phyllo dough, thawed (thin layered pastry sheets)
  • 1013 ounces brie cheese, rind removed (creamy melting cheese)
  • 5 small apples, thinly sliced (sweet-tart fruit)
  • 2 1/2 Tbsp brown sugar (adds light caramel sweetness)
  • Honey, for drizzling (finishing sweetness)
  • Flaky sea salt, for topping (balances flavors)

Instructions

  1. Preheat the oven to 350°F (177°C) and line a baking sheet with parchment or a silicone mat.
  2. Warm the butter with thyme in a small pan until melted, then transfer it to a heatproof dish.
  3. Brush a light coat of the thyme butter onto the lined baking sheet, then unroll the phyllo and cover unused sheets with a damp towel.
  4. Place one sheet on the baking sheet, brush with butter, then continue layering each sheet at a slight angle and brushing lightly, repeating until all sheets are used.
  5. Spread or scatter the brie over the center, leaving a wide border around the edges.
  6. Toss the apple slices with brown sugar and arrange them neatly over the brie.
  7. Fold the phyllo edges inward to frame the apples and coat the border with remaining thyme butter.
  8. Bake for 40–45 minutes until crisp and deeply golden.
  9. Finish with a drizzle of honey, a sprinkle of sea salt, and extra thyme if desired, then slice and serve warm.
