- 1 cup fresh spinach, chopped
- ½ cup artichoke hearts, canned or jarred, drained and chopped
- ½ cup cream cheese, softened
- ¼ cup Parmesan cheese, grated
- 1 clove garlic, minced
- ½ teaspoon dried basil
- ½ teaspoon dried oregano
- Salt and pepper to taste
- 4 boneless skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon paprika
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
Instructions
- Preheat your oven to 375°F (190°C) to prepare for baking the stuffed chicken.
- In a medium mixing bowl, combine chopped spinach, chopped artichoke hearts, softened cream cheese, grated Parmesan, minced garlic, dried basil, dried oregano, salt, and pepper. Mix all ingredients thoroughly until well blended.
- Using a sharp knife, carefully cut a pocket into the side of each chicken breast, being careful not to cut all the way through. Spoon the spinach and artichoke mixture into each pocket evenly. If needed, secure the opening with toothpicks to hold the filling inside during cooking.
- Season the outside of each stuffed chicken breast evenly with salt, pepper, paprika, garlic powder, and onion powder for added flavor.
- Heat 1 tablespoon of olive oil in a large oven-safe skillet over medium-high heat. Add the stuffed chicken breasts and sear them for 3 to 4 minutes on each side, until they develop a golden brown crust.
- Transfer the skillet to the preheated oven and bake the chicken for 15 to 20 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
- Remove the skillet from the oven and let the chicken rest for a few minutes. Carefully remove any toothpicks used and serve the Spinach and Artichoke Stuffed Chicken hot.
