A quick and flavorful weeknight meal featuring tender chicken and cheese tortellini in a creamy, spicy garlic sauce with a hint of Parmesan.

- 2 cups cheese tortellini (fresh or refrigerated)
- 2 boneless skinless chicken breasts, cut into bite-sized pieces
- 3 cloves garlic, minced
- 1 teaspoon red chili flakes, adjust to taste
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 cup heavy cream
- 3/4 cup freshly grated Parmesan cheese
- 1/2 teaspoon salt, divided
- 1/4 teaspoon black pepper, divided
- 2 tablespoons chopped fresh parsley
Instructions
- Season chicken pieces with 1/2 teaspoon salt, 1/4 teaspoon black pepper, and a pinch of red chili flakes.
- Heat 1 tablespoon olive oil and 1 tablespoon butter in a large skillet over medium heat.
- Add seasoned chicken to the skillet and sear for 6–7 minutes per side until golden brown and cooked through. Remove chicken from skillet and set aside.
- Meanwhile, cook tortellini in salted boiling water according to package directions. Reserve about 1/2 cup of pasta water before draining.
- Add the remaining 1 tablespoon of butter to the same skillet. Once melted, add minced garlic and remaining red chili flakes. Sauté for 30-60 seconds until fragrant, being careful not to burn the garlic.
- Pour in heavy cream and stir to combine. Simmer gently for 3–4 minutes until the sauce begins to thicken.
- Stir in grated Parmesan cheese and continue to simmer until the sauce reaches your desired consistency, coating the back of a spoon.
- Return the cooked chicken to the skillet with the sauce.
- Add the drained tortellini to the skillet. Toss everything gently to coat the tortellini and chicken in the sauce.
- If the sauce is too thick, add a splash of the reserved pasta water to thin it out.
- Taste and adjust seasoning if needed.
- Garnish with chopped fresh parsley and serve immediately.
