Ingredients

  • 2 cups cheese tortellini (fresh or refrigerated)
  • 2 boneless skinless chicken breasts, cut into bite-sized pieces
  • 3 cloves garlic, minced
  • 1 teaspoon red chili flakes, adjust to taste
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 cup heavy cream
  • 3/4 cup freshly grated Parmesan cheese
  • 1/2 teaspoon salt, divided
  • 1/4 teaspoon black pepper, divided
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Season chicken pieces with 1/2 teaspoon salt, 1/4 teaspoon black pepper, and a pinch of red chili flakes.
  2. Heat 1 tablespoon olive oil and 1 tablespoon butter in a large skillet over medium heat.
  3. Add seasoned chicken to the skillet and sear for 6–7 minutes per side until golden brown and cooked through. Remove chicken from skillet and set aside.
  4. Meanwhile, cook tortellini in salted boiling water according to package directions. Reserve about 1/2 cup of pasta water before draining.
  5. Add the remaining 1 tablespoon of butter to the same skillet. Once melted, add minced garlic and remaining red chili flakes. Sauté for 30-60 seconds until fragrant, being careful not to burn the garlic.
  6. Pour in heavy cream and stir to combine. Simmer gently for 3–4 minutes until the sauce begins to thicken.
  7. Stir in grated Parmesan cheese and continue to simmer until the sauce reaches your desired consistency, coating the back of a spoon.
  8. Return the cooked chicken to the skillet with the sauce.
  9. Add the drained tortellini to the skillet. Toss everything gently to coat the tortellini and chicken in the sauce.
  10. If the sauce is too thick, add a splash of the reserved pasta water to thin it out.
  11. Taste and adjust seasoning if needed.
  12. Garnish with chopped fresh parsley and serve immediately.
