Description

Tender, pillowy dinner rolls that rise easily and are perfect for sandwiches or a side to soups and roast dinners.


Ingredients

Scale
  • 360 g (3 cups) all-purpose flour or 375 g (3 1/4 cups) bread flour
  • 8 g (2 1/4 tsp) instant yeast
  • 30 g (2 tbsp) granulated sugar
  • 8 g (1 1/2 tsp) Diamond Crystal kosher salt
  • 56 g (4 tbsp) unsalted butter, softened
  • 15 g (1 tbsp) unsalted butter, melted for brushing
  • 240 ml (1 cup) whole milk, warmed
  • 1 large egg
  • Optional: extra melted butter and flaky sea salt for finishing

Instructions

  1. Warm the milk and bloom the yeast by pouring it into a saucepan, heating it, and stirring in sugar and yeast.
  2. Combine the milk mixture with the egg and softened butter in a mixing bowl.
  3. Add dry ingredients and mix until a shaggy dough forms.
  4. Knead the dough until smooth and elastic.
  5. Place the dough in an oiled bowl, cover, and let it rise until doubled in size.
  6. Turn the dough onto a floured surface, divide into twelve pieces, and shape into rolls.
  7. Let the shaped rolls rise until puffy.
  8. Bake at 190°C (375°F) until golden and serve warm.

Notes

For softest rolls, wrap the hot pan with a towel after baking for a few minutes. You can prepare the rolls the night before and bake them straight from the fridge.
