- 4 pounds Chuck roast (cubed into large bite-sized pieces about 1 1/2-2-inches each)
- ½ cup orange juice (freshly squeezed is ideal)
- 1/3 cup soy sauce (use reduced sodium if desired)
- 2 tablespoons olive oil
- 2 tablespoons honey
- 2 tablespoons garlic powder (or to taste)
- 1 tablespoon fresh ginger (finely minced)
- 1 cup beef broth (use reduced sodium if desired)
- 1 tablespoon cornstarch mixed with 1 tablespoon water (for thickening)
- 1 green onion (trimmed and sliced for garnishing)
- Toasted sesame seeds (optional)
- Salt (to taste)
- Freshly ground black pepper (to taste)
- Other fresh herbs (optional)
Instructions
- Optionally, sear the Chuck roast pieces in a skillet with olive oil for 2 minutes per side.
- Spray the insert of a slow cooker with cooking spray and add the Chuck roast pieces.
- In a bowl, whisk together orange juice, soy sauce, olive oil, honey, garlic powder, and ginger.
- Pour the mixture over the beef pieces.
- Add the beef broth, cover, and cook on HIGH for 4-5 hours or LOW for 8-9 hours.
- About 30 minutes before the meat is done, mix cornstarch and water to form a slurry and add it to the slow cooker.
- Cook until the meat is extremely tender and can be shredded with a fork.
- Garnish with green onions and sesame seeds, season with salt and pepper, or red pepper flakes.
- Serve with rice, mashed potatoes, green beans, or your favorite sides.

- You can halve the recipe if desired.
- Freezing leftovers is an option for later meals.
