Description

Slow Cooker Honey Garlic Pot Roast is juicy, flavorful, and easy to make. This dish uses basic ingredients and results in tender meat, perfect for a high protein comfort meal.


Ingredients

  • 4 pounds Chuck roast (cubed into large bite-sized pieces about 1 1/2-2-inches each)
  • ½ cup orange juice (freshly squeezed is ideal)
  • 1/3 cup soy sauce (use reduced sodium if desired)
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 2 tablespoons garlic powder (or to taste)
  • 1 tablespoon fresh ginger (finely minced)
  • 1 cup beef broth (use reduced sodium if desired)
  • 1 tablespoon cornstarch mixed with 1 tablespoon water (for thickening)
  • 1 green onion (trimmed and sliced for garnishing)
  • Toasted sesame seeds (optional)
  • Salt (to taste)
  • Freshly ground black pepper (to taste)
  • Other fresh herbs (optional)

Instructions

  1. Optionally, sear the Chuck roast pieces in a skillet with olive oil for 2 minutes per side.
  2. Spray the insert of a slow cooker with cooking spray and add the Chuck roast pieces.
  3. In a bowl, whisk together orange juice, soy sauce, olive oil, honey, garlic powder, and ginger.
  4. Pour the mixture over the beef pieces.
  5. Add the beef broth, cover, and cook on HIGH for 4-5 hours or LOW for 8-9 hours.
  6. About 30 minutes before the meat is done, mix cornstarch and water to form a slurry and add it to the slow cooker.
  7. Cook until the meat is extremely tender and can be shredded with a fork.
  8. Garnish with green onions and sesame seeds, season with salt and pepper, or red pepper flakes.
  9. Serve with rice, mashed potatoes, green beans, or your favorite sides.
