Description

A quick and easy recipe for tender chicken and fluffy rice, cooked slowly for maximum flavor.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain rice
  • 1 can (15 oz) diced tomatoes
  • 2 cups chicken broth
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. In the slow cooker, place the chicken breasts at the bottom.
  2. Sprinkle rice evenly over the chicken.
  3. Add diced tomatoes, chicken broth, onion, garlic, Italian seasoning, salt, and pepper.
  4. Cover and cook on low for 4 hours or until the chicken is cooked through.
  5. Remove chicken, shred it, and return it to the pot. Stir to combine.
  6. Serve hot, garnished with parsley.

Notes

For added flavor, consider using homemade chicken broth. Adjust cooking time if using frozen chicken.
