- 1 lb lean ground beef
- ¾ cup sweet onion, finely chopped
- 2 cloves garlic, minced
- ¾ cup BBQ sauce
- ¼ cup beef broth
- 1 tbsp Worcestershire sauce
- 2 cups cooked white rice (cold or day-old)
- 1 cup frozen peas and carrots
- ½ tsp salt
- ¼ tsp black pepper
- 2 green onions, sliced (for garnish, optional)
Instructions
- Heat a large skillet over medium heat. Add the ground beef and chopped sweet onion. Cook while breaking apart the meat with a spoon until the beef is browned and fully cooked, about 6–8 minutes. Drain excess grease if necessary.
- Stir in the minced garlic and cook for 1 minute until fragrant.
- Pour in the BBQ sauce, beef broth, and Worcestershire sauce. Stir to coat the beef evenly. Simmer for 3–5 minutes.
- Stir in the cooked rice, frozen peas and carrots, salt, and black pepper. Mix thoroughly.
- Continue cooking for another 5 minutes, stirring occasionally, until heated through.
- Remove from heat and top with sliced green onions, if desired.
