  • ¾ cup sweet onion, finely chopped
  • 2 cloves garlic, minced
  • ¾ cup BBQ sauce
  • ¼ cup beef broth
  • 1 tbsp Worcestershire sauce
  • 2 cups cooked white rice (cold or day-old)
  • 1 cup frozen peas and carrots
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 green onions, sliced (for garnish, optional)

Instructions

  1. Heat a large skillet over medium heat. Add the ground beef and chopped sweet onion. Cook while breaking apart the meat with a spoon until the beef is browned and fully cooked, about 6–8 minutes. Drain excess grease if necessary.
  2. Stir in the minced garlic and cook for 1 minute until fragrant.
  3. Pour in the BBQ sauce, beef broth, and Worcestershire sauce. Stir to coat the beef evenly. Simmer for 3–5 minutes.
  4. Stir in the cooked rice, frozen peas and carrots, salt, and black pepper. Mix thoroughly.
  5. Continue cooking for another 5 minutes, stirring occasionally, until heated through.
  6. Remove from heat and top with sliced green onions, if desired.
