Want a sweet treat for someone? These berry and macadamia crumbles are both delicious and nutritious. Crunchy coconut and oats are a perfect breakfast option paired with yogurt. If dessert is on your mind, enjoy the juicy berry and walnut topping served warm with a scoop of ice cream.
- 1 ½ cups frozen mixed berries
- ½ teaspoon of cinnamon
- ½ teaspoon vanilla extract
To break down
- 3 tbsp rolled oats
- 2 tsp macadamia nuts
- 1 tsp desiccated coconut
- 1 tsp maple syrup
- ¼ teaspoon of sea salt
- 2 tbsp butter or dairy-free coconut oil
- 1 tablespoon Greek yogurt or dairy-free coconut yogurt
Preheat the oven to 180°C or 350°F.
Combine all crumble ingredients in a food processor or blender. Add a small pinch of sea salt. Blitz until the mixture comes together, you want a few small bits of macadamia left to create texture.
Place the mixed berries in an ovenproof ramekin. Add the cinnamon and vanilla and mix to combine. Press the crumble over the berries.
Bake in the preheated oven for 15 minutes or until golden brown.
Serve with a dollop of your favorite yogurt.
