Delicious Shrimp and Chive Dumplings You Can Make at Home

- 1 oz chives (fresh)
- 1 teaspoon egg white (binding agent)
- 1/2 teaspoon tapioca starch (for binding)
- 1/2 teaspoon chicken bouillon powder (for savory flavor)
- 1/4 teaspoon salt (to enhance flavors)
- 1/4 teaspoon fish sauce (for umami)
- 1/4 teaspoon sesame oil (fragrant oil)
- 3 dashes white pepper powder (for heat)
- 1/2 teaspoon sugar (to balance flavors)
- 1 teaspoon oil (for frying)
- wonton skin (for wrapping)
- some cooking oil for pan-frying (to prevent sticking)
- 1 1/2 tablespoons soy sauce (for savory flavor)
- 1 1/2 tablespoons Chinese black vinegar (for tanginess)
Instructions
- Prepare the Shrimp: Clean and rinse the shrimps under cold water. Pat them dry.
- Make the Dipping Sauce: In a bowl, mix soy sauce and Chinese black vinegar. Set aside.
- Chop and Marinate: Cut each shrimp into small pieces, mix in chives and other filling ingredients, and marinate in the fridge for 30 minutes.
- Assemble the Dumplings: Lay a wonton skin flat, wet edges, and create a seal.
- Add the Filling: Place a teaspoon of shrimp mixture on the wonton skin, fold and shape.
- Seal Tightly: Dab edges with water, press to seal tightly.
- Heat the Pan: Add a teaspoon of oil to a pan over medium-low heat.
- Cook the Dumplings: Place dumplings into the heated pan, cover, and pan-fry until golden brown.
