Description

A beautiful and flavorful whole roasted cauliflower recipe that impresses with minimal effort.


Ingredients

Scale
  • 1 whole cauliflower
  • Olive oil
  • 1 clove garlic, minced
  • Zest of 1 lemon
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • Pinch of chili flakes (optional)
  • Flaky salt to taste
  • For zesty herb sauce: parsley, cilantro, lemon juice, olive oil, capers (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Trim the stem of the cauliflower so it sits flat and remove the green leaves.
  3. Rinse the cauliflower and pat it dry.
  4. Generously coat the cauliflower with olive oil.
  5. Mix minced garlic, lemon zest, smoked paprika, cumin, and chili flakes, then rub over the cauliflower.
  6. Place on a baking tray and roast for 45 minutes to 1 hour, until tender.
  7. For the zesty herb sauce, blend parsley, cilantro, lemon juice, olive oil, and capers.
  8. Drizzle the herb sauce over the cauliflower before serving and sprinkle with flaky salt.

Notes

For maximum flavor, cover with foil for the first half of baking, then uncover for the last part for browning. Store leftovers in an airtight container for up to 3 days.
