  • 2 tablespoons red onion, finely minced
  • 1 teaspoon green chili, finely minced
  • 1/4 teaspoon ground turmeric
  • 1/2 teaspoon kosher salt
  • 2 tablespoons cilantro, finely chopped
  • 1/3 cup milk or water
  • 2 slices bread (sourdough, multigrain, or whole wheat)
  • 2 tablespoons ketchup
  • 1/4 cup cilantro mint chutney

Instructions

  1. Whisk together the egg mixture by combining the minced onion, green chili, turmeric, salt, chopped cilantro, and milk in a wide bowl. Add in the eggs and whisk until everything is blended, about a minute.
  2. Soak one slice of bread in the egg mixture, gently pressing down with a fork to allow it to absorb the egg blend. Flip the bread over and repeat on the other side, ensuring it’s well-coated.
  3. Heat a non-stick pan over medium heat and add 1/2 teaspoon of oil. Once the oil is shimmering, carefully place the soaked bread onto the pan, topping it with some extra onions from the egg mixture for more flavor.
  4. Cook for about a minute, or until the bottom side starts to turn golden brown, checking to avoid burning.
  5. Flip the toast over and cook the other side for an additional minute until it becomes beautifully golden brown. Repeat this process with the remaining slice of bread.
  6. Serve hot with a side of ketchup and fresh cilantro mint chutney for an extra zing that complements your delightful crunchy toast.
