- 2 large eggs
- 2 tablespoons red onion, finely minced
- 1 teaspoon green chili, finely minced
- 1/4 teaspoon ground turmeric
- 1/2 teaspoon kosher salt
- 2 tablespoons cilantro, finely chopped
- 1/3 cup milk or water
- 2 slices bread (sourdough, multigrain, or whole wheat)
- 2 tablespoons ketchup
- 1/4 cup cilantro mint chutney
Instructions
- Whisk together the egg mixture by combining the minced onion, green chili, turmeric, salt, chopped cilantro, and milk in a wide bowl. Add in the eggs and whisk until everything is blended, about a minute.
- Soak one slice of bread in the egg mixture, gently pressing down with a fork to allow it to absorb the egg blend. Flip the bread over and repeat on the other side, ensuring it’s well-coated.
- Heat a non-stick pan over medium heat and add 1/2 teaspoon of oil. Once the oil is shimmering, carefully place the soaked bread onto the pan, topping it with some extra onions from the egg mixture for more flavor.
- Cook for about a minute, or until the bottom side starts to turn golden brown, checking to avoid burning.
- Flip the toast over and cook the other side for an additional minute until it becomes beautifully golden brown. Repeat this process with the remaining slice of bread.
- Serve hot with a side of ketchup and fresh cilantro mint chutney for an extra zing that complements your delightful crunchy toast.
