Description
Roast beef and cheese wrapped in crispy tortillas with au jus for dipping—perfect for parties or family snacks.
Ingredients
Scale
- 4 large flour tortillas, about 12 inches in diameter
- 8 slices provolone cheese, thinly sliced
- 12 ounces deli roast beef, freshly sliced
- 1 cup French fried onions, store-bought or homemade
- 2 tablespoons extra virgin olive oil
- 1 can (10.5 ounces) beef consommé
- 1 cup water
- 1 tablespoon Worcestershire sauce
- 2 teaspoons low sodium soy sauce
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
Instructions
- Set oven to 425°F (220°C). Line a rimmed baking sheet with parchment paper.
- Lay a tortilla flat. Place 2 slices of provolone cheese over half, followed by approximately 3 ounces of roast beef and a handful of French fried onions. Brush the inside tortilla edge lightly with olive oil.
- Starting from the filled end, roll up the tortilla tightly, pressing the oiled edge to seal. Place seam-side down on the prepared baking sheet. Repeat with remaining tortillas.
- Brush tops and sides of each roll lightly with remaining olive oil.
- Bake for 8–10 minutes, rotating baking sheet halfway through, until golden brown and cheese is bubbling.
- While roll ups bake, combine beef consommé, water, Worcestershire sauce, soy sauce, onion powder, and garlic powder in a small saucepan. Heat over medium, whisking to blend. Simmer for 3–4 minutes until hot.
- Let baked roll ups rest 2 minutes on a wire rack. Slice each roll into halves or thirds for serving.
- Arrange slices on a platter and serve immediately with warm au jus.
